Midnight Pasta

Even though it’s Midnight Pasta, this scrumptious recipe delights the appetite at any time of the day, and not just midnight!


Aglio and Olio Flavour

400-gm spaghetti

5 tbsp olive oil

4-5 garlic cloves

1 tsp red chili flakes

3-4 tbsp pasta water

1 ½ tbsp fresh parsley

Tomato and Fennel Flavour

3 tbsp olive oil

½ cup chopped onion

2 garlic cloves

1 ¼ tsp fennel powder

1 cup tomato

¼ cup water

½ tsp salt

1 tsp white vinegar

4-5 shrimps

2 tbsp pasta water

½ tsp pepper


1. Boil spaghetti in salt water

2. Cook for 10-12 minutes until al dente

3. Drizzle olive oil and add thinly sliced garlic

4. Cook until slightly brown on low heat for 4-5 minutes

5. Add red chili flakes and reserved pasta water

6. Add spaghetti and fresh parsley

7. Garnish with parmesan cheese before serving

8. To prepare another type of pasta, drizzle olive oil in pan

9. Add chopped onion, garlic, fennel powder, tomato and water

10. Simmer for 8-10 minutes

11. Salt to taste

12. Add vinegar and shrimp

13. Add spaghetti and pasta water

14. Add pepper

15. Garnish with parmesan cheese and basil leaves before serving

16. Ready to Enjoy!
