Biye Barir Style Fried Rice Recipe

Ingredients:

  • 1 tbsp cooking oil

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 250g thinly sliced chicken

  • ¼ tsp salt, plus more to taste

  • ¼ tsp pepper, plus more to taste

  • 1 tsp soy sauce

  • Another splash of cooking oil

  • ½ cup julienned carrots

  • ½ cup green beans, chopped

  • Pinch of salt

  • 1½ cups shredded cabbage

  • ¼ cup frozen peas

  • 1½ tbsp ghee

  • 1 small cinnamon stick

  • 4 cardamoms

  • 3 cloves

  • 1 bay leaf

  • ¼ cup cashews

  • 1½ tbsp raisins

  • 2 cups cooked rice

  • 1 tbsp white vinegar

  • 1½ tsp sugar

  • Spring onions, finely chopped for garnish

  • Green chilies, finely chopped for garnish






Instructions:

  1. Heat 1 tbsp of cooking oil in a pan. Add the garlic and ginger pastes, stirring quickly in the hot oil.

  2. Add the chicken slices, ¼ tsp salt, and ¼ tsp pepper. Mix well and cook for 3-4 minutes after adding 1 tsp soy sauce. Once cooked, set the chicken aside.

  3. In the same pan, add another splash of oil, then toss in the carrots and green beans. Sprinkle with a pinch of salt and cook for 1-2 minutes.

  4. Add the cabbage and frozen peas, and sauté on high heat for another minute. Set the vegetables aside.

  5. In the same pan, add the ghee, cinnamon stick, cardamoms, cloves, and bay leaf. Stir until fragrant.

  6. Add the cashews and raisins, cooking until the raisins plump up.

  7. Stir in the cooked rice, white vinegar, sugar, and adjust salt and pepper to taste. Mix thoroughly.

  8. Combine the cooked vegetables and chicken back into the pan. Mix everything well to distribute flavors evenly.

  9. Garnish with finely chopped spring onions and green chilies.
