Spice up your lunch with this delicious savory eggplant dish - Eggplant Potato Curry, that you will want to make again and again!

Ingredients:
3 eggplants
3 tbsp cooking oil
¼ tsp turmeric
¼ tsp salt
2 medium potato
2 tbsp cooking oil
1 medium onion
¾ tsp cumin
1 tsp garlic paste
1 tsp ginger paste
½ tsp turmeric
½ tsp red chili
1 tsp coriander
1 tsp garam masala
2 small tomato
1 tbsp tomato paste
1 tsp salt
½ cup of water
1 cup hot water
3-4 green chilies
2 tbsp fresh coriander
Instructions:
1. Cut up eggplants and soak in water
2. Coat eggplants in salt and turmeric
3. Add to pan with cooking oil
4. Fry for 2-3 minutes then remove from heat
5. Toss potato slices and fry for 2-3 minutes then remove from heat
6. Drizzle cooking oil and add sliced onion
7. Saute until light brown and add cumin with a splash of water
8. Add garlic and ginger paste
9. Add turmeric, red chili, coriander, and garam masala
10. Saute for 4-5 minutes
11. Stir in chopped tomatoes, tomato paste, and a splash of water
12. Pour water and salt to taste
13. Cooking for 3-4 minutes on low heat with the lid on
14. Add back the potatoes and hot water
15. Add eggplants and green chilies
16. Cover with lid and cook for 4-5 minutes until potatoes are soft
17. Garnish with fresh coriander
