Peri-Peri Chicken Recipe



Ingredients

For The Marinade:

  • Olive oil 2 tbsp

  • Onion 1/2 cup

  • Garlic 4 cloves

  • Thai red chili 5 pcs

  • Red bell pepper 1/4 cup

  • Oregano 1 tbsp

  • Paprika 1 tbsp

  • Salt to taste

  • Red Vinegar 1 tbsp

  • Parsley 1/4 cup

  • Lime juice 2 tbsp

  • Olive oil 2 tbsp

Chicken:

  • 3-4 pounds (or 1 1/2kg to 2kg)

  • Salt and pepper to season


Instructions:

  1. First in a pan add a little bit of live oil and saute onion, garlic, thai red chili and red bell pepper until lightly brown.

  2. Now place them in a blender and blend it with oregano, paprika, salt, red vinegar , parsley , lime juice and olive oil .

  3. Score the chicken and season them with salt and black pepper. Using 3/4 of the marinade, coat the chicken evenly on the outside until fully coated in sauce. Cover with plastic wrap and marinate for 5-6 hrs.

FOR THE BBQ:

  1. Place chicken on well-greased grill over medium heat, for 10-12 minutes, until the chicken begins to have a nice char on it. Flip and baste with a small amount of sauce (not too much or it will burn on your grill plates). Flip once or twice while cooking, until chicken is completely cooked through and juices run clear.
