Mughlai Chicken

While it's admittedly a little homely, it's a chicken recipe that everyone just loves.



Serving Size: 4-6


Ingredients:

Marinate

1 kg Chicken

1 tsp Salt

1 tsp Lime Juice

½ cup Plain Yogurt

1 tsp Garlic Paste

1 tsp Ginger Paste

½ tsp Turmeric


Cooking

4 tbsp Cooking Oil

1 tsp Cumin Seeds

2 Cinnamon Sticks

5 Cardamom

5 Cloves

2 Bay Leaves

8 Black Peppercorn

1 tbsp Coriander Powder

1 tsp Red Chili Powder

1 tsp Cumin Powder

12 Cashew, Paste

12 Almond, Paste

1 cup Fried Onions

1.5 cups Hot Water

½ tsp Salt


Garnish

½ cup Cream

½ cup Fried Onion

4-5 Green Chilies

Instructions:

1. Marinate the chicken with salt, lime juice, yogurt, garlic paste, ginger paste, and turmeric and set aside

2. Temper the following in cooking oil until fragrant; cumin seeds, cinnamon sticks, cardamom, cloves, bay leaves and black peppercorns

3. Add the marinated chicken and sauté for 10 minutes

4. Add coriander powder, red chili powder, cumin powder to the pot of chicken and stir fry for 5 minutes

5. Add cashew-almond paste, fried onion and stir fry for another 5 minutes

6. Pour water, salt to taste, cover and cook for 15 minutes on medium-low heat with lid on

7. Cook for another 5 minutes with the lid off and garnish with cream, green chilies and fried onions

8. Ready to Enjoy!
