Cauliflower Porota / Paratha


For the dough

Whole wheat flour 2 cups

Salt to taste

Oil 1 tbsp

Water 210 ml

For cauliflower stuffing

Onion 1/2 cup

Garlic paste 1/2 tsp

Ginger paste 1/2 tsp

Green Chilli 2 chopped

Turmeric 1/4 tsp

Red Chilli 1/4 tsp

Grated cauliflower 2 cups

Tomato 1/2 cup

Salt to taste

Gorom mosolla / masala 1/2 tsp



Making dough:

1. Kneed the whole wheat flour, salt and oil with water to smooth dough.

2. cover and keep aside for 15 to 20 minutes

Making Stuffing for porota/paratha:

In a hot pan add onion , ginger garlic paste, chopped chilli , red pepper and turmeric powder then saute for a bit. Then add grated cauliflower , tomato, gorom mosolla, corriander and saute the spices.

Making the Porota/Paratha:

Roll out a small disc from the dough ball , add a few tablespoons of the grated cauliflower mix in the center on top of the rolled out disc. Be careful as not to understuff or overstuff the porota. Bring the edges of the dough, join them and flatten them as showed in the video. Now roll the stuffed porota/paratha gently to size of a roti. On a hot skillet place the rolled porota/paratha and fried well.

Serve it hot with green chilli /onion or pickels.
