Ingredients:

  • 600g shrimp, head on

  • ½ tsp salt

  • ½ tsp chili powder

  • ½ tsp turmeric powder

  • 4 tbsp mustard oil

  • ½ tsp cumin seeds

  • 3 crushed cardamom pods

  • 2-3 small cinnamon sticks

  • 2 dry red chilies, broken into halves

  • 1¼ cups thinly sliced onion

  • 1 bay leaf

  • 1 tsp ginger paste

  • 1 tsp garlic paste

  • 2 tomatoes, chopped

  • ¾ tsp salt (to taste)

  • 1 tsp turmeric powder

  • 1½ tsp kashmiri red chili powder or paprika

  • 3-4 tbsp water

  • 1¾ cups warm coconut milk

  • ¼ cup warm water

  • 5-6 green chilies

  • 1 tsp roasted cumin powder






Instructions:

  1. Prepare the Shrimp: Take 600g of shrimp, add ½ tsp each of salt, chili powder, and turmeric powder. Mix well and lightly fry for 1-2 minutes each side. Set aside.

  2. Heat the Oil: In a pan, add 4 tbsp of mustard oil and heat until you see light smoke. Lower the heat.

  3. Spice it Up: Add ½ tsp of cumin seeds, 3 crushed cardamom pods, 2-3 small cinnamon sticks, and 2 broken dry red chilies. Mix well.

  4. Onion Time: Add 1¼ cups of thinly sliced onions and 1 bay leaf. Fry until the onions turn light brown.

  5. Add Aromatics: Add 1 tsp each of ginger and garlic paste. Stir for 30 seconds.

  6. Tomato & Spices: Add the chopped tomatoes, ¾ tsp salt, 1 tsp turmeric, and 1½ tsp of kashmiri red chili powder or paprika. Sauté well.

  7. Cook the Masala: Add 3-4 tbsp of water, cover, and cook for 3 minutes on low heat. Uncover and sauté until oil separates.

  8. Shrimp In: Add the reserved lightly fried shrimps and mix well.

  9. Creamy Goodness: Add 1¾ cups of warm coconut milk and ¼ cup of warm water. Mix well.

  10. Final Cook: Cover and cook on low heat for another 3 minutes.

  11. Garnish: Finish off with 5-6 green chilies and a sprinkle of 1 tsp roasted cumin powder.
