Ingredients:

  • Cabbage: ½ cup, thinly sliced

  • Onion: ½ cup, thinly sliced

  • Carrot: ¼ cup, thinly sliced

  • Green onion: ¼ cup, thinly sliced

  • Green chili: 1, chopped

  • Salt: ¾ tsp, plus extra to taste

  • Maida (All-purpose flour): 1 cup + 1 tbsp

  • Rice flour: ¼ cup

  • Cornflour (Cornstarch): 1 tbsp

  • Chicken powder or Maggi masala: 1 tsp

  • Large egg: 1

  • Cold water: 1â…” cups

  • Garlic paste: 1 tsp

  • Ginger paste: 1 tsp

  • Cooking oil: as needed

  • Additional green onions, chopped, for garnishing

  • Your favorite condiment (e.g., ketchup, hot sauce)






Instructions:


  1. In a mixing bowl, combine the cabbage, onion, carrot, green onion, green chili, and ¾ tsp salt. Mix well and set aside.

  2. In another bowl, blend together maida, rice flour, cornflour, and chicken powder or Maggi masala. Set this aside.

  3. Return to your veggie mix. Stir in a large egg until well combined. Gradually add the flour mixture to the veggies, mixing until incorporated.

  4. Pour in 1â…” cups of cold water, blending until the batter is smooth. Add the garlic and ginger pastes, and adjust the salt to your taste.

  5. Heat a non-stick or cast iron pan over medium heat. Add 2 tablespoons of cooking oil.

  6. Ladle the batter onto the pan, shaping it into a nice, round porota.

  7. Cook the porota for 4-5 minutes, or until the bottom is golden brown. Carefully flip it over, add a bit more oil, and cook for an additional 4-5 minutes, or until crisp and cooked through.
