Shrimp Biryani





Ingredients:

Shrimp

1 lb fresh large shrimp

½ tsp salt

¼ tsp turmeric

½ tsp shah jeera

2 bay leaves

2 small cinnamon sticks

5 cardamom

5 cloves

8-10 peppercorn

1 medium sliced onion

1 tsp garlic

1 tsp ginger

4-5 green chili paste

1 small chopped tomato

½ tsp ground coriander

½ red chili

1 tsp salt

2 tbsp coconut paste


Rice

½ tsp shah jeera

2 small bay leaves

2 small cinnamon sticks

4 cardamom

4 cloves

3 tbsp sliced onion

3 cup-soaked rice

½ tsp ginger

6 cups hot water

1 tsp salt

4 tbsp friend onions

2 tbsp ghee

4-5 green chilies

2 tbsp food coloring

2 tbsp fresh coriander

1 tsp garam masala



Instructions:

1. Mix the shrimp pieces with salt and turmeric

2. Transfer the shrimp to a frying pan with a bit of cooking oil for

3. Once the shrimps are cooked, remove from pan

4. Stir in the shah jeera, bay leaves, cinnamon sticks, cardamom, cloves, peppercorn, and sliced onion

5. After 2-3 minutes add garlic, ginger, green chili paste, chopped tomato, ground coriander, red chili, salt, coconut paste and a splash of water

6. Add the shrimp to the saucepan and remove from heat

7. It a large pot, drizzle cooking oil, temper the shah jeera along with bay leaves, cinnamon sticks, cardamom and cloves until fragrant

8. Add sliced onion, rice that has been soaked for 30 minutes, ginger, hot water and salt

9. Cook for 6-7 minutes on high heat and stir occasionally

10. Cook for another 10 minutes on low heat with lid on

11. Add fried onions, shrimps, ghee, green chilies, optional food coloring, freshly chopped coriander leaves and garam masala

12. Cook for 10 more minutes on low heat with lid on

13. Ready to Enjoy!
