Quinoa Salad

A quick and easy quinoa salad tossed with a simple lemony vinaigrette, and it's SO fresh and delicious!


Healthy Quinoa salad

Ingredients

Scallions chopped / সবুজ পেঁয়াজ পাতা 2 tbsp

Carrot chopped / গাজর কাটা 2 tbsp

Cilantro chopped / ধনে কাটা 2 tbsp

Mint chopped / পুদিনা কাটা 1 tbsp

Red bell pepper / লাল বেল মরিচ 1 pc

Water / পানি 2 cups

Cranberries chopped / ক্র্যানবেরি কাটা 5 pcs

Quinoa 1 cup

Cumin powder / জিরা গুঁড়া 1/2 tsp

Coriander powder / ধনে গুঁড়া 1/2 tsp

Turmeric powder / হলুদ গুঁড়া 1/2 tsp

Salt to taste / স্বাদ অনুযায়ী লবণ

Salad Dressing

Olive oil / জলপাই তেল 4 tbsp

Honey / মধু 1 tbsp

Lime juice / লেবুর রস 1 tbsp

Salt & Pepper to taste / লবণ এবং মরিচ


Directions

  • Bring 2 cups of water to boil in a large saucepan, over medium heat.

  • Add washed quinoa, cumin powder, coriander powder, turmeric powder and salt to taste. Stir and mix everything together.

  • Cover, reduce heat to low and simmer until quinoa is tender.

  • Once cooked, transfer quinoa onto a salad bowl, add chopped scallions, chopped cilantro, chopped carrot, chopped mint and chopped red bell pepper. Stir and mix everything.

  • Pour the dressing over the salad and add chopped dried cranberries.

Mix well and enjoy this easy healthy salad.
