Labra / Mixed vegetable

Fresh green vegetables sauted together in a host of savory spices. You can't go wrong with a great mixed vegetable dish served best with roti or paratha.


Ingredients

Oil 2 tbsp

Bay leaf 1 pc

Dry red chilli 2 pcs

Paanch phoron 1 tsp

Onions 1 cup sliced

Red chilli powder 1/2 tsp

Turmeric powder 1/2 tsp

Coriander powder 1/2 tsp

Cumin powder 1/2 tsp

Garlic minced 1 tsp

Ginger minced 1 tsp

Bori / Dried lentil dumpling 50 g

Carrot 100g

Eggplant 100g

Green papaya 250g

Green beans

Drumstick 50g

Potato 250g

Bittermelon 100g

Pumpkin 250g

Saoked Masoor Lentil 1/4 cup

Green chilli 4 pcs

Coriander leaves (1/4 cup)

Ghee 1 tsp (optional)


Cooking Directions

  • Heat 2 tbsp of oil in a pan, fry bori (dried lentil dumpling) and bitter melon pieces for couple minutes. This helps reduce the bitterness, add a pinch of salt while frying. Remove from pan and set aside.

  • In the same pan add 2 tbsp of oil over medium heat, add bay leaf, dry red chilli, paanch phoron and sliced onions. Sauté until the onions are translucent.

  • Add red chilli powder, turmeric powder, coriander powder, cumin powder, minced garlic and ginger. Sauté for couple minutes, add water as required.

  • Add potatoes, green papaya and carrot, stir and mix everything together. Add salt and 1/4 cup water (enough to boil the vegetables). Close lid and simmer for 5 minutes.

  • Add pumpkin, drumsticks, eggplant and soaked red lentils. Add 2.5 cup water and simmer for 10-15 mins under closed lid.

  • Add fried bori/ dried lentil dumpling and bitter melon, add green chilli and coriander leaves.

  • Add 1 tsp of ghee (optional).

Serve hot with roti or paratha.
