How to Make Soan Papri at Home

This light delicate flakey dessert pair well with a cup of tea


Ingredients:

2 tbsp ghee

¼ cup gram flour

½ cup ap flour

1 tsp ghee

½ tsp cardamom powder

1 cup sugar

¼ cup water

¼ tsp lemon juice



Instructions:

1. Add ghee to a pan and stir in gram flour

2. Mix in ap flour with the gram flour and add more ghee

3. Fry for 8 minutes on low heat

4. Remove the flour from heat and sift through a strainer and set aside

5. Dissolve sugar in a pot with water and a few drops of lemon

6. Cook for 20 to 22 minutes on low heat until brown

7. Do not rush the process

8. Rub ghee on a silicone board

9. Pour the dissolved sugar on the board

10. Wait for the sugar to cool down before you start to work with it

11. Stretch the sugar and coat it with flour

12. Continue the process until you have established layers of delicate flakey threads

13. Place the soan papri in a molding cup to form shape

14. Sprinkle crushed pistachios before serving

15. Ready to enjoy!
