Ingredients
Carrot 4 cups
Milk 2 cups
Sugar 1/2 cup
Ghee 3 tbsp
Chana / Ricotta cheese 1 cup
Cardamom powder 1/2 tsp
Pistachio diced 1/2 cup
Directions
Wash, peel and grate the carrots.
Add the grated carrots and milk in a heated pan. Bring the whole mixture to a boil in low medium flame. Allow the milk to simmer and reduce to almost 75%, add sugar and ghee. Stir well and continue to simmer at low flame, add chana/ricotta cheese. Mix all the ingredients well, add cardamom powder and sliced pistachio. Gently stir everything together, stir fry for couple minutes and remove the pan from heat.
Serve hot! Garnish with sliced pistachio or almonds.
