Ingredients:

  • 420g of beef fillet

  • Salt, ¼ tsp

  • Pepper, ¼ tsp

  • 1 whole egg

  • 3/4 cup of cornflour or cornstarch

  • Cooking oil for deep frying

  • 1 tbsp cooking oil

  • 1 tbsp chopped ginger

  • 4 large garlic cloves, crushed

  • 1 large carrot, cut into matchsticks

  • 1 medium onion, thinly sliced

  • 1 tbsp sugar

  • 2½ tbsp soy sauce

  • 3 tbsp rice vinegar

  • 1 tbsp water

  • 1½ tbsp honey

  • ¼ cup thinly sliced green onions

  • 1 tbsp chili flakes

  • 1 tsp sesame oil

  • Thinly sliced green chilis for garnish




Instructions:

  1. Start by cutting your beef fillet into thin strips.

  2. In a bowl, add salt (¼ tsp), pepper (¼ tsp), and 1 whole egg to the beef strips. Mix well to evenly distribute the seasoning.

  3. Coat the beef strips in 3/4 cup of cornflour or cornstarch, ensuring all sides are covered. Shake off the excess flour.

  4. In a wok or deep pan, heat enough cooking oil for deep frying. Once the oil is hot, deep fry the beef strips for 3 minutes, ensuring they become crispy. Do this in batches to prevent overcrowding, and then set the fried beef aside.

  5. Clean the wok and add 1 tbsp of cooking oil. Add in the chopped ginger and crushed garlic cloves, sautéing until they become fragrant.

  6. Add in the matchstick-cut carrot and thinly sliced onion to the wok. Sauté for another minute to soften the vegetables slightly.

  7. Next, add in the sugar, soy sauce, rice vinegar, water, and honey. Mix these well, letting the mixture come to a boil.

  8. Add in the thinly sliced green onions and chili flakes, stirring to combine.

  9. Once the sauce is boiling, add the fried beef strips back into the wok. Mix well to ensure the beef is coated in the sauce.

  10. Take the wok off the heat, and stir in the sesame oil and a pinch of salt to taste.

  11. To serve, garnish the dish with thinly sliced green chilis.
