Ingredients:

  • Chicken: 1 whole chicken (bone-in), cut into small pieces

  • Oil: 2 tbsp cooking oil

  • Whole Spices:

  • 1 medium cinnamon stick

  • 5 cardamoms

  • 2 bay leaves

  • Seasonings:

  • 1 tsp salt

  • 3 tsp garlic, chopped

  • 2 tsp ginger, chopped

  • ½ tsp black pepper

  • 1½ tsp chicken powder

  • ½ tsp white pepper

  • Pinch of sugar

  • Vegetables:

  • 1 onion, cut into petals

  • ½ cup green beans

  • 1 large carrot, sliced

  • ½ cup cabbage

  • 1 green bell pepper, cut into petals

  • 4 green chilies, slit

  • Milk Mixture:

  • 1 cup water

  • ¼ cup powdered milk

  • 1 tbsp cornstarch or cornflour

  • Finishing Touch:

  • 1 tbsp ghee





Instructions:

  1. Heat Spices: In a large pan, heat the cooking oil and add the cinnamon stick, cardamoms, and bay leaves. Stir for a few seconds until aromatic.

  2. Sauté Chicken: Add the chicken pieces to the pan and sauté over medium-high heat for about 5 minutes.

  3. Add Seasonings: Incorporate salt, chopped garlic, chopped ginger, and black pepper. Continue to sauté for another 5 minutes over medium-high heat.

  4. Simmer: Reduce the heat to low, cover the pan, and let the chicken cook for 15 minutes, stirring occasionally.

  5. Evaporate Water: Increase the heat to high and cook until the water slightly evaporates.

  6. Add Vegetables: Mix in the onion petals, green beans, sliced carrot, and cabbage. Stir well and sauté over high heat for a couple of minutes.

  7. Add More Vegetables: Stir in the chicken powder, then cover and cook for 5 minutes on low heat. Afterward, add the green bell pepper and slit green chilies, cover, and cook for another 5 minutes.

  8. Thicken Sauce: Prepare the milk mixture by combining water, powdered milk, and cornstarch. Pour this over the chicken mixture and cook until the sauce thickens.

  9. Final Seasoning: Finish off by stirring in white pepper, ghee, and a pinch of sugar.

  10. Serve: Serve this delightful chicken with mixed vegetables alongside rice, pulao, or paratha for a complete meal.
