Spice up your lunch with this super delicious Begun/Eggplant Kofta Curry recipe!
Ingredients:
3 eggplants
2 chopped green chilies
¼ tsp turmeric
¾ cup chickpea flour
½ tsp salt
2 tbsp sliced onion
1 medium potato
2 tbsp cooking oil
¼ cup sliced onion
½ tsp garlic paste
½ tsp ginger paste
½ tsp red chili
½ tsp turmeric
1 tsp coriander
½ tsp roasted cumin
1 medium tomato
½ tsp salt
1 tsp ghee
2 green chilies
1 tsp fresh coriander
Instructions:
1. Coat the whole eggplants with oil
2. Grill the eggplants
3. Remove the skin and transfer the eggplants into a clear bowl
4. Mash the eggplants
5. Mix in green chilies, turmeric, chickpea flour, and sliced onion
6. Take about a tablespoon of the mixture and drop it in deep oil
7. Deep fry until golden brown on medium heat
8. Deep dry potato cuts until light brown
9. Drizzle cooking oil in a pan and add sliced onion, garlic paste, ginger paste, and a splash of water
10. Stir in red chili, turmeric, coriander, roasted cumin, tomato, and salt to taste
11. Add the fried potatoes and a splash of water
12. Fry for 2-3 minutes
13. Stir and cover with a lid to cook for 2 minutes
14. Remove lid and add the fried eggplants
15. Garnish with ghee, green chilies, and fresh coriander
16. Ready to Enjoy!
