Yummy Steamed Egg Curry

This is a perfect dish to create when you have nothing on hand but a case of eggs in your fridge.



Ingredients:

7 eggs

4 tbsp poppy seeds

½ cup onion

5 green chilies

¼ tsp salt

1 tbsp mustard oil

½ tsp red chili

½ tsp turmeric

¼ tsp salt

2 tbsp mustard oil

½ tsp red chili

½ tsp turmeric

½ tsp salt

¼ tsp sugar

3 green chilies



Instructions:

1. Boil eggs for 10 minutes then transfer to a bowl of ice water

2. Soak poppy seeds in water for 15 minutes then drain out the excess water and wash with cold water

3. Blend the soaked poppy seeds with onion, green chilies, and salt

4. Set aside the poppy seed puree

5. Stir fry the boiled eggs for 2-3 minutes in a pan with mustard oil, red chili, turmeric, and salt

6. Set the egg aside

7. Mix the poppy seed puree with mustard oil, red chili, turmeric, and salt to taste in a pot

8. Gradually mix in water

9. You may add sugar as an option for a hint of sweetness

10. Place the fried boiled eggs into the pot and cover with a lid

11. Steam for 12-14 minutes

12. Ready to enjoy!
