Gosh, this was so good, super easy to make.
Ingredients:
350-gram papaya
½ tsp salt
1 thinly sliced carrot
2 tbsp cooking oil
4 garlic
1 ½ tbsp ginger
300-gram chicken breast
4-5 green chilies
2 tbsp soy sauce
½ cup onion
1 bell pepper
½ tsp pepper
1 cup boiled water
¼ tsp sugar
½ cup water + 2 tsp cornstarch
Instructions:
1. Wash all the vegetables and set aside for cooking
2. Place sliced papaya in a large pot with water
3. Add salt to taste and boil for about 4 minutes until cooked
4. Strain out the papaya and set aside
5. Repeat with slices of carrot and boil for 2 minutes then strain out the carrots
6. Save the broth for later usage
7. Take a clear pan and drizzle cooking oil
8. Stir in thinly sliced garlic and ginger
9. Add chicken breast pieces and stir until chicken loses the translucent colour
10. Stir in green chilies and dark soy sauce and mix well
11. Mix in the cooked papaya and carrot from earlier
12. Stir in onion petals and bell pepper
13. Sprinkle black pepper to taste
14. Pour a cup of the reserved vegetable broth
15. An optional step is to add a pinch of sugar
16. Lastly, stir in the cornstarch slurry to thicken the sauce
17. Best served with a side bowl of jasmine rice or fried rice
18. Ready to enjoy!
