
Ingredients:
Step 1- Rice
1 tbsp ghee
1 bay leaf
5 cloves
2 cups basmati rice
2 cups boiling water
½ tsp salt
Step 2 - Chicken
3 tbsp cooking oil
1 medium onion
1 ½ tsp garlic ginger paste
500-gm chicken pieces
¼ tsp salt
2 ½ tbsp biryani masala
4 tbsp yogurt + tsp sugar
1 small potato
Step 3 - Assemble
1 tsp kewra water
2 tbsp fried onions
½ cup hot milk
1 tsp saffron water
2 tbsp fried onions
5 green chilies
Instructions:
1. In a large pot, stir in ghee, bay leaf, cloves and basmati rice that has been soaked for 30 minutes
2. Fry for about a minute
3. Pour boiling water in pot
4. Salt to taste
5. Cover with lid and cook for 4-5 minutes on low-medium heat
6. Remove pot from heat
7. Drizzle cooking oil in pan
8. Add sliced onion and sauté until light brown
9. Stir in garlic ginger paste and add chicken pieces
10. Add biryani masala and salt
11. Fry for 7-8 minutes
12. Mix in yogurt and add potato pieces
13. Cover with lid and cook for 15 minutes on low heat while occasionally stirring
14. Add kewra water, fried onions and layer rice on top of the chicken
15. Pour hot milk and saffron water or food color
16. Garnish with fried onions and green onions
17. Cover with lid and cook for another 20 minutes on the lowest heat
18. Uncover and mix before serving
19. Ready to enjoy!
