A simple egg curry recipe makes for the perfect weekday meal. Eggs poached in a rich and spicy tomato curry is sure to satisfy any palate.
Ingredients
Cooking Oil / রান্নার তেল 2 tbsp
Onion sliced / পেঁয়াজ কাটা 1/2 cup
Garlic paste / রসুনের পেস্ট 1 tsp
Red chilli powder / লাল মরিচ গুঁড়া 1/2 tsp
Turmeric powder / হলুদ গুঁড়া 1/2 tsp
Tomato sliced / টমেটো কাটা 1 cup
Water / পানি 1 cup
Egg / ডিম 4
Green chilli / কাঁচা মরিচ 4 pcs
Coriander leaves / ধনে পাতা 2 tbsp
Roasted Cumin powder /রোস্ট জিরা গুঁড়া 1/2 tsp
Directions
Heat 2 tbsp of oil in a skillet over medium heat.
Add sliced onions and saute until translucent. Add garlic paste, red chilli powder, turmeric powder and saute until the spices are fragrant. Stir and saute for couple minutes, add water if needed to saute.
Add chopped tomato and salt to taste, continue to cook until the tomatoes soften. The salt helps to release water, cover with lid if needed to soften them.
Add 1 cup of water, stir and mix to form gravy. Cover with lid and let it simmer for couple minutes.
Break 4 eggs into the tomato curry and cover with lid again. Lower heat to low-medium and allow the eggs to cook through.
Uncover and add green chilli (halved), coriander leaves and roasted cumin powder.
Remove from heat and serve hot.
Serve immediately with white rice. Enjoy!
