Shahi Chicken Haleem

Hearty delicious bowl of chicken haleem


Haleem Spice Mix

4 cardamoms

3 dry red chilies

5 cloves

1 mace

2 long peppers

2 cinnamon sticks

1 black cardamom

¼ nutmeg

1 bay leaf

1 tsp cumin seeds

1 tsp coriander seeds

½ fennel seeds

½ tsp pepper


½ cup basmati rice

¼ cup masoor dal

¼ cup maskolai dal

¼ cup moong dal

¼ cup wheat

3 cups hot water

¼ cup + 2 tbsp cooking oil

2 small onions

1 kg chicken

1 ¼ tbsp ginger paste

1 ¼ tbsp garlic paste

2 tsp salt

1 ¼ tsp red chili

¾ tsp turmeric

2 tbsp haleem spice mix

¼ cup water

4 cups hot water

5-6 green chilies

2 cups hot water

1 tbsp haleem spice mix

2 tbsp ghee

½ tsp fenugreek seeds

½ tsp mustard


2 tbsp coriander

2 tbsp red onion

2 tbsp ginger

2 tbsp green chilies


1. Toast the following until fragrant; basmati rice, masoor dal, maskolai daal, moong dal, and wheat then blend coarsely using a blender

2. Transfer to a large bowl and pour in hot water

3. In a pan, toast the following until fragrant, cardamoms, dry red chilies, cloves, mace, long peppers, cinnamon sticks, black cardamom, nutmeg, bay leaf, cumin seeds, coriander seeds, fennel seeds, and pepper

4. Blend the Haleem spice mix and set it aside

5. Add cooking oil to a large pot and stir in thinly sliced onion

6. Saute the onion until light brown

7. Add chicken pieces, garlic and ginger paste, salt to taste, red chili, and turmeric

8. Saute the chicken for 5 minutes

9. Add a splash of water and stir in haleem spice mix

10. Saute for another 5 minutes

11. Pour in water and cook for 5 minutes on low heat with the cover on

12. Uncover and mix in the rice and dal

13. Pour in hot water

14. Add green chilies and cook for 15 minutes on low heat with cover on

15. Stir every 2 minutes

16. Add salt to taste

17. Pour in hot water

18. Add more haleem spice mix

19. Let haleem simmer until the dal is cooked

20. Add ghee to a pan and toast fenugreek and mustard seeds

21. Transfer the fragrant ghee to the haleem pot

22. Prepare garnish for haleem by mixing fresh coriander, red onion, ginger, and green chilies

23. Ready to enjoy!
