One Pot Vuna Mangser Khichuri Recipe

One pot khichuri is a perfect easy comfort dish to prepare, especially on a rainy day.



Ingredients:

4 tbsp cooking oil

1 ½ cups onion

3 bay leaves

2 small cinnamon sticks

5 cardamoms

2 black cardamoms

½ tsp pepper

10 cloves

1 ½ tbsp ginger paste

1 ½ tbsp garlic paste

1 kg lamb

1 tsp red chili

½ tsp turmeric

1 tsp coriander

1 ½ tsp cumin

1 ½ tsp salt

2 cups hot water

1 cup moon dal

1 tsp garam masala

6-8 green chilies

2 cups kalijira rice

3 ½ cups hot water

1 ½ tsp salt

1 tbsp ghee



Instructions:

1. start off with frying sliced onions on medium to high heat until light brown in colour

2. Stir in bay leaves, small cinnamon sticks, cardamoms, black cardamoms, pepper, and cloves

3. Mix in garlic and ginger paste

4. Pour a splash of water as you stir

5. Add lamb cut pieces

6. Mix in red chili, turmeric, coriander, and cumin

7. Add salt to taste

8. Saute for 10 minutes on high heat

9. Pour two cups of hot water

10. Cover with lid and cook until tender for 30 to 40 minutes on low heat

11. Stir occasionally

12. Roast and soak moong dal before adding it to the pot of lamb

13. Add two cups of kalijira rice

14. Pour three and a half cups of hot water

15. Add salt to taste

16. Cover with lid and cook for another 20 minutes on low heat

17. Drizzle ghee before serving

18. Ready to enjoy!
