KachKola’r Kofta In Spiced Tomato Gravy




Ingredients:

Kofta

350-gm unripe green banana

2 cups water

¼ tsp turmeric

1 small boiled potato

½ tsp salt

¼ tsp red chili

½ tsp garam masala

½ tsp ginger paste

2 green chilies

2 tbsp gram flour

2 tbsp fresh coriander

1 tsp ghee


Curry

2 ½ tbsp cooking oil

½ tsp cumin

1 medium onion

1 tsp garlic ginger paste

½ tsp coriander

¼ tsp turmeric

½ tsp red chili

½ tsp garam masala

2 small tomato

1 ½ tsp cashew paste

1 ¼ cups hot water


Garnish

2 green chilies

1 tbsp fresh coriander

1 tsp ghee



Instructions:

1. In a pot, add pieces of unripe green banana

2. Pour water and turmeric in pot

3. Cook until soft for 15-20 minutes

4. Remove banana from pot and peel off the skin

5. Add a boiled potato and mash

6. Add salt, red chili, garam masala, ginger paste, fresh coriander, green chilies and gram flour

7. Add ghee and mix well

8. Form kofta shapes and fry in hot oil on medium-high heat until golden brown

9. Set the kofta aside

10. In a pan, drizzle cooking oil and add sliced onion with cumin seeds

11. Saute onion until soft

12. Add garlic ginger paste with a splash of water

13. Add coriander, turmeric, red chili and garam masala

14. Saute for 2-3 minutes and add splashes of water as needed to prevent burning

15. Add diced tomato pieces, cashew paste and salt to taste

16. Saute for another 6-7 minutes

17. Pour hot water and add kofta pieces

18. Cover with lid and simmer for 4-5 minutes on low heat

19. Garnish with green chilies, ghee and fresh coriander

20. Ready to enjoy!
