400g boneless chicken (either breast or thighs)
1½ tbsp gochugaru (Korean chili pepper flakes)
½ tsp chili flakes
1½ tsp chopped garlic
1½ tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp honey or sugar
½ tsp lemon juice
Pinch of salt
¼ tsp of pepper
1 chopped green chili
½ cup mozzarella cheese
1 tbsp chopped green onion
Make the Buldak Paste: In a bowl, combine 1½ tbsp of gochugaru, ½ tsp chili flakes, 1½ tsp chopped garlic, 1½ tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp of honey or sugar, and ½ tsp lemon juice. Mix well and set aside.
Prepare the Chicken: On a non-stick cast-iron pan, add 400g of boneless chicken. Sprinkle a pinch of salt and ¼ tsp of pepper.
Cook the Chicken: Cook until the chicken is browned all over. For breast pieces, cook for 5-6 minutes; for thighs, cook for 8-10 minutes.
Add the Sauce: Once browned, add the reserved Buldak paste and 1 chopped green chili to the pan. Cook for an additional 3-4 minutes.
Cheesy Goodness: Sprinkle ½ cup of mozzarella cheese over the chicken.
Let it Melt: Cover the pan and cook over very low heat until the cheese melts.
Final Touch: Open the cover and sprinkle 1 tbsp of chopped green onions.
