Ingredients:

  • 400g boneless chicken (either breast or thighs)

  • 1½ tbsp gochugaru (Korean chili pepper flakes)

  • ½ tsp chili flakes

  • 1½ tsp chopped garlic

  • 1½ tbsp light soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp honey or sugar

  • ½ tsp lemon juice

  • Pinch of salt

  • ¼ tsp of pepper

  • 1 chopped green chili

  • ½ cup mozzarella cheese

  • 1 tbsp chopped green onion






Instructions:

  1. Make the Buldak Paste: In a bowl, combine 1½ tbsp of gochugaru, ½ tsp chili flakes, 1½ tsp chopped garlic, 1½ tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp of honey or sugar, and ½ tsp lemon juice. Mix well and set aside.

  2. Prepare the Chicken: On a non-stick cast-iron pan, add 400g of boneless chicken. Sprinkle a pinch of salt and ¼ tsp of pepper.

  3. Cook the Chicken: Cook until the chicken is browned all over. For breast pieces, cook for 5-6 minutes; for thighs, cook for 8-10 minutes.

  4. Add the Sauce: Once browned, add the reserved Buldak paste and 1 chopped green chili to the pan. Cook for an additional 3-4 minutes.

  5. Cheesy Goodness: Sprinkle ½ cup of mozzarella cheese over the chicken.

  6. Let it Melt: Cover the pan and cook over very low heat until the cheese melts.

  7. Final Touch: Open the cover and sprinkle 1 tbsp of chopped green onions.
