Eggs infused in aromatic masala curry perfectly paired with fluffy white rice
Ingredients:
5 eggs
4 tbsp cooking oil
1 ½ tsp pepper
¼ tsp turmeric
¼ tsp salt
½ tsp cumin
1 onion
3 green chilies
1 tbsp garlic ginger paste
¾ tsp red chili
½ tsp turmeric
1 tsp coriander
½ tsp garam masala
1 tomato
¾ tsp salt
½ tsp roasted cumin
2 tbsp fresh coriander
Instructions:
1. Cook the eggs for about 12 minutes
2. Transfer the eggs to an iced water bowl
3. Remove the shell and cut the egg in half
4. Add cooking oil to a pan and mix in pepper, turmeric, and salt
5. Face down the egg in the pan and gently fry for 1-2 minutes
6. Remove the eggs from heat and set aside
7. Add cumin and chopped onion
8. Saute the onion until light brown
9. stir in garlic and ginger paste
10. Add green chilies, red chili, turmeric, coriander, and garam masala
11. Saute for 3 minutes on medium heat
12. Mix in chopped tomato and salt to taste
13. Cover with lid and cook for 4 minutes on low heat
14. Uncover and place the eggs in the pan
15. Sprinkle roasted cumin
16. Garnish with fresh coriander
17. Ready to enjoy!
