Easy Hot and Sour Soup

Perfect soup recipe to stir up on a cold-cold winter night.


750 gm chicken pieces

½ cup chopped onion

3 tbsp ginger

2 bay leaves

10 cups water

3 cups bok choy

1 ½ cups carrot

½ cup shiitake mushroom

1 tsp ginger

2 cups water

1 ¼ tsp salt

3 tbsp dark soy sauce

¼ cup white vinegar

1 ½ tsp pepper

¾ cup fresh coriander

½ cup water

2 ½ tbsp cornstarch


1. Place chicken in large pot along with roughly chopped onions, sliced ginger, and bay leaves

2. Pour in 10 cups of water

3. Simmer for 1 hours on low heat

4. Remove the chicken pieces from the broth

5. Strain out the broth using a cheese cloth and set aside

6. Remove skin and bones from chicken pieces

7. Shred the chicken and set aside

8. Add leafy greens to a large pot along with shredded carrot, shitake mushroom, and ginger

9. Pour in the broth along with 2 cups of additional water as needed

10. Bring it to a boil

11. Add salt to taste

12. Stir in dark soy sauce, white vinegar, and fresh coriander

13. Add in the shredded chicken

14. Stir in cornstarch slurry to thicken the soup

15. Mix well before serving

16. Ready to enjoy!
