Delicious Fruit Semai Custard Recipe

Ingredients:

  • 1 tsp Ghee

  • ½ cup Vermicelli/Semai

  • 3½ cups Whole Milk

  • 2 tbsp Powdered Milk

  • ¼ cup Sugar

  • A pinch of Salt

  • 2 tbsp Custard Powder (Vanilla flavored or any flavor of your choice)

  • ½ cup Milk (for mixing with custard powder)

  • ¼ tsp Saffron

  • Fruits and Dry Fruits for layering (e.g., Pomegranate, Grapes, Mango, Apple, Nuts, Tutti Frutti, Cherry)





Instructions:

  1. Roast the Semai: In a pan, add 1 tsp of ghee and ½ cup of vermicelli/semai. Sauté over medium-low heat until golden brown. This step is crucial as it determines the final taste and texture of the dish. Once the semai is golden and fragrant, set it aside.

  2. Prepare the Milk: Wipe the pan clean and add 3½ cups of whole milk and 2 tbsp of powdered milk. Bring to a boil, stirring continuously to prevent the milk from scorching.

  3. Cook the Semai: Once the milk comes to a boil, add the roasted semai and cook for 8 minutes until tender.

  4. Add Sugar: Add ¼ cup of sugar and a pinch of salt. Cook for another 1-2 minutes until the sugar dissolves.

  5. Prepare the Custard: In a separate bowl, mix 2 tablespoons of custard powder with ½ cup of milk until well combined. Gradually pour this mixture into the pan while stirring continuously to avoid lumps. Cook until the mixture thickens. Add a pinch of saffron for color and fragrance.

  6. Chill the Custard: Pour the custard into a bowl and let it cool. Then, refrigerate for 1-2 hours.

  7. Assemble: In a serving bowl, layer the chilled custard with a variety of fruits and dry fruits of your choice.
