Delicious Chicken & Dumplings

Perfect comfort recipe for a cold night


Ingredients:

Chicken

¾ cup ap flour

½ tsp salt

½ tsp pepper

½ tsp red chili

1 kg chicken

1 tsp butter

1 large onion

1 large carrot

½ tsp salt

1 tsp red chili

4 garlic cloves

¼ cup ap flour

2 bay leaves

12 cups hot water

4 tbsp white vinegar

½ tsp pepper

2 ½ tsp cornstarch

¼ cup water

½ tsp roasted cumin

2 tbsp coriander


Dumpling

1 ½ cups ap flour

2 tsp baking powder

½ tsp roasted cumin

½ tsp salt

1 green chili

4 tbsp coriander

2/3 cup milk

1 tbsp butter



Instructions:

1. Coat chicken pieces in flour, salt, pepper, and red chili

2. Fry the chicken pieces for 2 and a half minutes on each side on low to medium heat

3. Remove the chicken pieces from heat and set aside

4. Add butter in the pot along with chopped onions, carrots, salt, red chili, garlic cloves, ap flour, and bay leaves

5. Pour in hot water and vinegar

6. Add salt to taste

7. Add pepper and the slightly fried chicken pieces from earlier to the pot

8. Cover with lid and let it simmer for 30-35 minutes on low to medium heat

9. Uncover and remove the chicken pieces and bay leaves

10. Remove the bone and shred the chicken pieces then add it back to the pot

11. Prepare dumpling by mixing ap flour in a clear bowl with baking powder, roasted cumin, salt, green chili, coriander, milk, and butter

12. Use an ice cream scooper to place the dumpling pieces into the pot

13. Cover with lid and let it simmer for 20 minutes on low heat

14. Uncover and stir in cornstarch slurry to thicken the soup

15. Finish off with a sprinkle of roasted cumin and fresh coriander

16. Ready to enjoy!
