Vietnamese Chicken Pho Soup With Homemade Chicken Stock

Easy chicken pho bowl recipe for lunch or dinner any time of the week


Ingredients:

2-inch charred ginger

1 onion

½ an apple

¼ cup fresh coriander

1 ½ tbsp coriander

4 cloves

½ star anise

1 tsp cooking oil

9 cups water

1 whole chicken

1 ½ tbsp fish sauce

½ tsp sugar

1 tbsp onion

1 tbsp fresh coriander

1/2 tbsp green onions



Instructions:

1. Roast ginger for 2 minutes

2. Add coriander seeds, cloves, and star anise in a large pot and fry until fragrant

3. Add cooking oil, onion, charred ginger, and apple

4. Pour in room temperature water

5. Add a whole chicken and fresh coriander

6. Cook for 10 minutes on high heat

7. Remove excess foam

8. Cover with lid and cook for 30 minutes on low to medium heat

9. Turn the chicken and cook for another 5 minutes

10. Remove the chicken and shred chicken into chunks

11. Strain out the broth into a cup and pour it into a large pot

12. Add fish sauce, sugar and desired amount of rice noodles

13. Cook the rice noodles for 2-3 minutes

14. Transfer out the rice noodles into a pho bowl

15. layer it with chicken pieces, onions, green chilies, and pho broth

16. Garnish with green onions and fresh coriander

17. Ready to enjoy!
