Chicken Kofta



Ingredients

Kofta balls:

Chicken mince 1/2 lb

Green chilli (chopped) 2 pcs

Fried onion / Onion beresta (chopped) 1 tbsp

Gorom masala powder 1/2 tsp

Mint leaves 1/2 tsp

Coriander or Parsley 1/2 tsp

Lime juice 1 tsp

Salt to taste

Garlic paste 1/2 tsp

Ginger paste 1/2 tsp

Breadcrumbs 1 tbsp

Corn starch 1 tbsp

Black pepper 1/2 tsp

Curry

Onions 1/2 cup

Cinnamon 2 pcs

Cardamom 3 pcs

Cloves 2 pcs

Garlic paste 1/2 tsp

Ginger paste 1/2 tsp

Red chilli powder 1/2 tsp

Coriander powder 1/2 tsp

Nutmeg powder 1 pinch

Mace powder 1 pinch

Yogurt mix ( 1 tsp sugar + 1/2 cup yogurt)

Hot water 1 cup

Cream 1/4 cup

Beresta 1/4 cup

Ghee 1 tsp

kewra water 1/4 tsp

Salt to taste


Directions

Transfer minced chicken in a big bowl and add ingredients one by one. Add chopped

green chilli, onion beresta (fried onions), gorom masala, mint leaves, garlic, ginger paste, lime juice. Mix all ingredients together. Add salt and black pepper. Add breadcrumbs and corn starch to bind everything together.

Rub little oil in both hands and make small kofta balls, this portion will make 12 balls.

Heat a non-stick pan, add oil and shallow fry the kofta balls at medium heat, roughly for 10 minutes. Once they turn golden brown, remove from pan and keep aside.

The remaining oil in the pan should be good to make curry. Add onions and saute until translucent, then add cardamom, cinnamon, cloves, ginger and garlic paste. Add red chilli and coriander powder, nutmeg and mace, sauté all spices together for couple minutes. Add water if needed. Add yogurt mix and stir everything together. Add the kofta balls and 1 cup hot water, stir everything together. Add salt to taste. Close lid and let it cook at medium heat for 15 minutes. When the water has reduced, add cream and fried onion. Stir everything together. Add ghee and kewra water. Give it a stir for a last time and remove from heat.
