The perfect plate of comfort meal consisting of flavoured rice with a side of crispy tender chicken cutlet
Ingredients:
Chicken
2 chicken breasts
1 tsp water
½ tsp turmeric
1 tsp roasted cumin
1 ½ tsp pepper
¾ tsp salt
2 eggs
1 cup panko
½ tsp coriander
½ tsp salt
Rice
2 tbsp butter
3 tbsp onion
1 tbsp tomato paste
½ tsp roasted cumin
¼ tsp turmeric
1 tsp salt
3 cups hot water
Instructions:
1. Butterfly cut the chicken
2. Tenderize the chicken pieces using a mallet
3. Whisk in egg with, turmeric, water, roasted cumin, pepper, and salt
4. Coat the chicken in egg mixture and let it marinate for 1 hour or more
5. Add butter to a pan and stir in onion and tomato paste
6. Saute the onions for 3 minutes
7. Mix in chopped green chilies, 2 cups of soaked basmati rice, roasted cumin, turmeric, and salt
8. Pour in hot water and bring it to a simmer
9. Cover with a lid and cook for 15 minutes on low heat
10. Mix panko with coriander and salt
11. Coat the chicken with panko mix
12. Fry the chicken for 3 minutes on each side
13. Serve the chicken cutlet with yellow rice
14. Ready to enjoy!
