Cabbage Stir Fry with Egg


Apart from it's healthy benefits, Cabbage is one of the most versatile vegetable there is. Delicious on it's own but when stir fried with eggs and coriander leaves, this makes an irresistible weeknight meal!

Enjoy this easy stir-fry recipe that is perfect served over rice but hearty enough to be enjoyed on its own too!


Ingredients

Cabbage, thinly sliced 3 lbs

Onion sliced 1/2 cup

Turmeric powder 1/2 tsp

Salt to taste

Egg 1

Green chilli 4-5 pcs

Coriander leaves 1/4 cup


Directions

  • In a large deep skillet, heat 2 tbsp of oil over medium-high heat

  • Add sliced onions and saute for couple minutes, until it's translucent

  • Add sliced cabbage and stir well so it gets completely coated with oil. Add turmeric powder, salt to taste.

  • Mix well, cover and continue to cook over low-medium heat until the cabbage softens, frequently stirring.

  • Break an egg over the cabbage. Let the eggs cook for couple minutes, stir and mix everything

  • Add green chilli and coriander leaves. Stir and cook for 1-2 minutes.

  • Remove from heat and serve immediately with steaming rice.
