Aloor Dom / আলুর দম রেসিপি


In the name of everything comforting and good, this classic dish is a mix of abundant spices with soft round potatoes.

Give your taste buds a treat and try this easy and delicious recipe of aloor dom. Best served with rice, luchi, pharatha or roti.

Ingredients

Small potatoes (boiled) 600 grams

Coriander powder 1/2 tsp

Cumin powder 1/2 tsp

Yogurt 1/2 cup

Sugar 1 tsp

Salt to taste

Garam masala 1/2 tsp

Kasuri methi/ Fenugreek leaves 1 tsp

Green chillies 4-5 pcs

Coriander leaves 1/4 cup

Tomato paste:

Garlic cloves (halved) 5 pcs

Ginger 1 inch (sliced)

Cherry Tomato (halved) 1/2 cup

Onions (cubed) 1/2 cup

Cloves 2 pcs

Cashew nut 1/4 cup

Green cardamom 2 pcs

Cinnamon 1 stick

Black peppercorns 5 pcs

Cumin seeds 1/2 tsp

Turmeric powder 1/2 tsp

Red chilli powder 1/2 tsp


Preparation

Wash, peel and boil potatoes. Set them aside.

Directions

  • Place potatoes in a mixing bowl, toss them around with a pinch of red chilli powder, turmeric powder and salt to taste

  • Fry them in a pan until they turn slightly golden brown, for approximately 2-3 min

  • Heat oil in a pan, add raw cumin seeds. Roast them for a minute, then add turmeric powder, red chilli powder, cumin powder and coriander powder.

  • Add tomato paste and sauté them for couple minutes over medium heat. Add water if needed while sautéing.

  • In a bowl, mix yogurt with sugar and add to gravy. Sauté again for couple minutes until the oil surfaces to the top.

  • Add fried boiled potatoes and 1 cup water. Close lid and let it cook for 15 mins at low-medium heat. Add fenugreek leaves, green chillies and coriander leaves.

Serve hot, alongside luchi or parathas! Enjoy!
