Aloor Dom


A classic comfort food easily ready in just 30 minutes. Give your taste buds a treat by trying our version of aloor dom.


Ingredients

Potato 4 Turmeric powder 1/2 tsp Salt to taste Paanch phoron 1/2 tsp Garlic 1/2 tsp Ginger 1/2 tsp Onion 1 cup Bay leaves 1 Cinnamon 1 stick Cardamom 2 Cloves 2 Red chilli powder 1/4 tsp Coriander powder 1/4 tsp Hot water 1 1/2 cup Roasted cumin powder 1/2 tsp Coriander leaves 1/4 cup Green chilli 4 pcs


Directions

Peel and cut potatoes into small cubes. Wash them in cold water and drain the water. Fry the potatoes in oil, mixed with salt and 1/4 tsp of turmeric, until they have golden brown color. Remove into a bowl and keep aside.

Add oil on a heated pan, add paanch phoron and onions. Sauté until the onions are translucent. Add bay leaf, cinnamon, cardamom, cloves, turmeric powder, coriander powder, turmeric powder, ginger, garlic and sauté all the spices for couple minutes at medium high heat. Add water as required to saute the spices, stirring generously. As the water reduces, add fried potatoes, salt and mix everything together with the spices. Add hot water 1 cup, allow the potatoes to cook completely, cover with lid. This may require some time, approximately 5 minutes at medium heat, keep stirring in between and add more hot water if needed to boil the potatoes. Once the potatoes are boiled, add roasted cumin powder, coriander leaves and green chilli. Remove from heat, serve hot with luchi!

Serve hot alongside luchi or paratha! Enjoy!
