Achari Chicken

Aromatic mouthwatering achari chicken bursting with flavour


Ingredients:

550 gm boneless chicken thighs

1 tsp salt

1 tbsp chili flakes

½ tsp turmeric

6-7 large garlic cloves

1 tbsp ginger paste

1 tbsp mustard oil

½ tsp fenugreek seeds

1 tsp black mustard

1 tsp fennel seeds

1 tsp garam masala

¾ cup cooking oil

1 ½ cup onion

1/8 tsp hing

1 ¼ tbsp ginger

1 ¼ tbsp garlic

2/3 cup white vinegar

1 tsp salt

2 ½ tbsp mustard oil



Instructions:

1. Mix boneless chicken thighs with salt, chili flakes, turmeric, mashed garlic cloves, and ginger paste

2. Coat with mustard oil and let it marinate for 30 minutes or more

3. Toast fenugreek seeds, black mustard seeds, and fennel seeds for 1 to 2 minutes on low heat until fragrant

4. Transfer the toasted seeds and crush it with garam masala using a mortar and pestle

5. Pour in cooking oil in a large pan and add thinly sliced onion and fry for 12 minutes on medium heat until golden brown

6. Remove the onion from heat once it has reached the gold brown colour

7. Add the marinated chicken pieces to the pan and fry for 6-7 minutes on medium heat

8. Remove the chicken from pan and set aside

9. Add hing, ginger and garlic paste, and the spice mix from earlier

10. Sauté the spices for 2 minutes with the heat off

11. Pour in white vinegar and bring to a simmer

12. Add salt to taste

13. Add the chicken pieces along with fried onions, mustard oil, and cool for 2 to 3 minutes

14. Turn off the heat and serve with rice or roti

15. Ready to enjoy!
