One-Pot Chicken and Rice (For Lazy Cooks)

This is the one-pot chicken and rice you make when you want maximum comfort for minimum cleanup: deeply browned chicken, onions cooked down until jammy and almost caramelized, and basmati rice that finishes cooking right in the coconut milk it lands in. The technique that matters most here isn't the ingredient list, it's patience in three spots — sear the chicken properly, don't rush the onions, and let the pot rest, covered, before you serve. Do those three things and everything else takes care of itself.

Ingredients

  • 1 kilograms chicken drumsticks or bone-in/boneless chicken pieces, scored (about 10 drumsticks)

  • 0.8 teaspoons salt, for the marinade

  • 1 teaspoons garlic paste

  • 1 teaspoons ginger paste, for the marinade

  • 0.8 teaspoons red chile powder

  • 0.5 teaspoons turmeric

  • 0.5 teaspoons cooking oil, for the marinade

  • 2 tablespoons plain yogurt

  • 3 tablespoons cooking oil, for frying

  • 0.8 cups thinly sliced onion

  • 2 bay leaves

  • 0.5 teaspoons salt, with the onions

  • 1 teaspoons ginger paste, for the onions

  • 2 cups basmati rice, soaked 30 minutes and drained

  • 0.3 teaspoons roasted cumin powder

  • 1 can (400 ml) coconut milk

  • 2 cups water

  • 0.8 teaspoons garam masala, for the rice

  • 1 pinch sugar

  • 0.5 teaspoons garam masala, to finish

  • 1 tablespoons ghee, or more to taste

  • 2 tablespoons chopped cilantro or parsley





Steps


Marinate the chicken: In a large bowl, combine 1 kilograms chicken drumsticks or bone-in/boneless chicken pieces, scored (about 10 drumsticks) with 0.8 teaspoons salt, for the marinade, 1 teaspoons garlic paste, 1 teaspoons ginger paste, for the marinade, 0.8 teaspoons red chile powder, and 0.5 teaspoons turmeric, then drizzle in 0.5 teaspoons cooking oil, for the marinade. Massage everything into the chicken with your hands until every piece is evenly coated — this is faster and more thorough than a spoon. Mix in 2 tablespoons plain yogurt and let it sit for 15 minutes 15:00. In a hurry? Skip the marinating time entirely and go straight to searing; the dish will still turn out well.


Sear the chicken: Heat 3 tablespoons cooking oil, for frying in a Dutch oven or other heavy-bottomed pot over high until shimmering, then lower the heat to medium. Add the chicken in a single layer and let it fry undisturbed for 15 minutes 15:00 so it actually develops color instead of steaming. Flip and continue cooking, turning occasionally, until browned on all sides, 12–15 minutes total. Transfer to a plate — it doesn't need to be cooked through yet, it'll finish with the rice.


Build the onion base: Add 0.8 cups thinly sliced onion, 2 bay leaves, and 0.5 teaspoons salt, with the onions to the same pot. Cook over medium heat, stirring occasionally, until the onions turn light brown. If browned bits from the chicken are stuck to the bottom, splash in a little water and scrape them up with your spoon — that fond is most of your flavor. Keep cooking until the liquid evaporates and the oil separates and pools at the edges of the pot.


Bloom the ginger: Stir in 1 teaspoons ginger paste, for the onions and cook just until fragrant, about 30 seconds 00:30. Any longer and it turns harsh instead of aromatic.


Add the rice: Add the drained 2 cups basmati rice, soaked 30 minutes and drained and 0.3 teaspoons roasted cumin powder to the pot. Stir gently so every grain gets coated in the onion mixture without breaking.


Season the liquid: Pour in 1 can (400 ml) coconut milk and 2 cups water, then stir in 0.8 teaspoons garam masala, for the rice and 1 pinch sugar. Bring to a boil and taste the liquid — it should read slightly saltier than you want the finished rice, since the grains will absorb the seasoning as they cook. Adjust salt now if it needs it.

Cook covered: Nestle the chicken back into the pot along with any juices from the plate and give everything one gentle stir. Cover, drop the heat to low, and cook undisturbed for 15 minutes 15:00. Don't lift the lid to check — every peek lets out steam the rice needs to finish cooking evenly.


Finish and rest: Turn off the heat. Sprinkle 0.5 teaspoons garam masala, to finish over the top, then fold the rice gently with a fork so you loosen the grains without mashing them. Drizzle with 1 tablespoons ghee, or more to taste and scatter 2 tablespoons chopped cilantro or parsley on top. Cover again and let the pot rest, off the heat, for 5–10 minutes 10:00 — this settles the temperature and lets the last bit of steam finish the rice. Then serve.



Notes

Bone-in chicken (drumsticks or thighs) gives more flavor back to the rice than boneless, but either works fine. Use full-fat coconut milk and shake the can well before opening — it's the biggest lever on richness here. Don't skip the resting step at the end; it's what keeps the rice from turning gluey the moment you dig in. Leftovers reheat well covered over low heat with a splash of water.
