Mixed Vegetable



Ingredients:

Cauliflower 1 cup

Carrot 1 cup

Green beans 1 cup

Green peas 1 cup

Spinach 1 cup

Zucchini 1 cup

Baby Okra 1 cup

Potato 1 cup

Onion chopped 1 cup

Garlic sliced 1 tbsp

Bay leaf 2 pcs

Coriander powder 1 tsp

Turmeric powder 1/4 tsp

Green chilli 6 pcs

Paanch Phoron 1 tbsp

Water 1 cup

Salt to taste

Butter 2 tbsp

Oil 2 tbsp

Directions:

In a large pot over medium high heat, add the butter, oil, bay leaves, paanch phoron, onion, garlic and sauté for couple minutes. Add carrots, green beans, potato, green peas, turmeric and coriander powder and saute for 3-4 minutes, until tender and fragrant. Stir in the cauliflower, zucchini, baby okra, water as required and salt to taste. Cover with lid and let it cook for couple minutes. Add green chilli, baby spinach and cook for couple more minutes until softened.

Serve hot!
