Iranian Dum Tea & Tandoori Cha

This is your one stop to two rich aromatic tea recipes to enjoy any hour of the week. The scent of the milky spices will linger around the atmosphere as you sit down to enjoy your cup of warm tea pairing perfectly with your favourite sweet or savory snacks.



Ingredients:

Iranian Dum Tea

2 cup water

3 tbsp black tea

1 ½ tsp sugar

2 cup milk

¼ cup condensed milk


Ingredients:

Tandoori Cha

¾ cup water

1 tsp ginger

2 cinnamon sticks

3 cups milk

4-5 tsp black tea

2-3 tsp sugar

2 cardamoms



Instructions for Iranian dum tea:

  1. Bring water to boil then add loose black tea

  2. Add sugar and cover with cover

  3. Seal the lid with dough

  4. Let the tea simmer for 20 minutes on low heat

  5. Reduce milk to 1 1/3 cup in a separate pan while continuously stirring

  6. Stir in condensed milk

  7. Remove dough and uncover lid

  8. Strain out the loose ground tea

  9. Pour the tea in a cup

  10. Top it with reduced milk before serving

  11. Ready to enjoy!


Instructions for tandoori cha:

  1. Pour water in a pot on stovetop

  2. Let ginger and cinnamon sticks infuse in the water

  3. Pour in milk and continuously stir

  4. Bring it to boil then turn off heat

  5. Add loose black tea

  6. Add brown sugar to taste

  7. Add crushed cardamoms

  8. Cover with lid and let it steep for two minutes with no heat on

  9. Uncover and simmer the tea for 10-12 minutes on low heat

  10. Heat wash a clay pot on high flame

  11. Place the clay pot in a pot

  12. Remove the spices and loose tea by straining the tea onto the clay pot

  13. Remove the clay pot

  14. Transfer tea to a cup and serve

  15. Ready to enjoy!
