4¼ cups hot water
3 cups kalijeera or gobindobhog rice, soaked
1 tsp sugar
¼ cup fried onions
1 tbsp ghee
2 tbsp coriander, chopped
Instructions:
Heat Oil and Spices: In a large pan, heat the cooking oil. Add bay leaves, cardamom, mace, cloves, peppercorns, and thinly sliced onions. Sauté for 1-2 minutes until fragrant.
Add Pastes and Chicken: Stir in the garlic and ginger pastes until combined. Add chicken pieces, red chili powder, turmeric powder, 2 tsp of salt, and chopped mint. Sauté over medium heat until well mixed.
Cook Chicken: Cover and cook over low heat for about 5 minutes, or until the chicken releases its juices.
Add Vegetables and Garam Masala: Uncover and sprinkle in the garam masala powder. Add diced potatoes, cauliflower, green beans, bell pepper, and green chilies. Stir well over high heat.
Cook with Water: Pour in the hot water, bring to a boil, then cover and simmer over medium-high heat for 10 minutes.
Add Rice: Stir in the soaked rice, add 1 tsp salt and 1 tsp sugar. Increase heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and cook for 15 minutes.
