Deliciously Easy: One Pot Chicken Pulao Recipe for Busy Bachelors

Combining tender chicken, aromatic spices, and a colorful array of vegetables with fluffy kalijeera rice, this pulao is not just a meal but a nourishing comfort food, perfect for any day of the week.





Ingredients:

  • 4 tbsp cooking oil

  • 4 bay leaves

  • 8 cardamom pods, bruised

  • ½ blade mace

  • 7 cloves

  • 8 peppercorns

  • ½ cup onion, thinly sliced

  • 1 tbsp garlic paste

  • 1 tbsp ginger paste

  • 1.3 kg chicken, cut into small pieces

  • 1½ tsp red chili powder

  • 1 tsp turmeric powder

  • 2 tsp salt (adjust to taste)

  • 2 tbsp mint, chopped

  • 2 tsp garam masala powder

  • 1 medium potato, diced

  • 1 cup cauliflower florets

  • ½ cup green beans, chopped

  • 1 bell pepper, diced

  • 12 green chilies, slit

  • 4¼ cups hot water

  • 3 cups kalijeera or gobindobhog rice, soaked

  • 1 tsp sugar

  • ¼ cup fried onions

  • 1 tbsp ghee

  • 2 tbsp coriander, chopped








Instructions:

  1. Heat Oil and Spices: In a large pan, heat the cooking oil. Add bay leaves, cardamom, mace, cloves, peppercorns, and thinly sliced onions. Sauté for 1-2 minutes until fragrant.

  2. Add Pastes and Chicken: Stir in the garlic and ginger pastes until combined. Add chicken pieces, red chili powder, turmeric powder, 2 tsp of salt, and chopped mint. Sauté over medium heat until well mixed.

  3. Cook Chicken: Cover and cook over low heat for about 5 minutes, or until the chicken releases its juices.

  4. Add Vegetables and Garam Masala: Uncover and sprinkle in the garam masala powder. Add diced potatoes, cauliflower, green beans, bell pepper, and green chilies. Stir well over high heat.

  5. Cook with Water: Pour in the hot water, bring to a boil, then cover and simmer over medium-high heat for 10 minutes.

  6. Add Rice: Stir in the soaked rice, add 1 tsp salt and 1 tsp sugar. Increase heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and cook for 15 minutes.

  7. Final Touches: Once the rice is cooked, gently mix in fried onions, ghee, and chopped coriander. Cover and let the pulao rest off the heat until ready to serve.

  8. Serve: Enjoy your flavorful and comforting chicken pulao, a complete meal in one pot.
