An easy bowl of delicious tomato soup that can be served any time of the day
Ingredients:
2 medium tomatoes
3 tbsp unsalted butter
1 large onion
1 ¼ tsp garlic
1 ½ tbsp tomato paste
½ tsp oregano
¼ tsp naga morich
2 cups unsalted stock
1 ¼ cups water
1 tbsp cream
Instructions:
1. Dice the fresh medium size tomatoes
2. Add butter and chopped onion to a large pan
3. Add salt to taste
4. Fry the onion until brown for 7-8 minutes on low heat
5. Stir in minced garlic, tomato paste, oregano, and naga morich
6. Pour in unsalted stock of your desire, chicken or vegetable
7. Pour in water and mix well
8. Place on low heat and simmer for 10 minutes
9. Add a pinch of sugar for taste
10. Transfer the soup into a blender and puree
11. Transfer the puree back to the pan and stir
12. Place soup in a bowl and garnish with a drizzle of cream
13. Ready to enjoy!
