Ingredients:

  • Mustard Oil: 3 tbsp (divided)

  • Green Chili: 18-20, slit slightly

  • Garlic Cloves: 10-12 large, halved if too large

  • Onion: 1 small, thinly sliced

  • Turmeric: A pinch, plus extra for seasoning

  • Salt: To taste, plus extra for seasoning

  • Shrimp: 5-6, cleaned

  • Coriander: 1 bunch, roughly chopped

  • Red Onion: 2 tbsp, thinly sliced






Instructions:

  1. Heat the Pan: In a pan, heat 1½ tbsp of mustard oil over medium heat.

  2. Saute the Ingredients: Add the green chilies, ensuring they are slit to prevent bursting. Add the garlic and sliced onion along with a pinch of turmeric and salt. Sauté until the onion and garlic soften.

  3. Cook the Shrimp: Add the shrimp to the pan, season with a pinch of turmeric and salt, and sauté for 2-3 minutes until they are cooked.

  4. Add Coriander: Introduce the chopped coriander to the pan, cooking for about 1 minute. Be careful not to overcook to maintain the freshness of the herbs.

  5. Blend the Ingredients: Transfer the cooked ingredients to a mortar and pestle or a blender. Blend until well combined but still retaining some texture.

  6. Final Touches: Mix in the remaining 1½ tbsp of mustard oil, additional salt to taste, and the thinly sliced red onion.

  7. Serve and Enjoy: Serve the bhorta with hot rice or chitoi pitha for a comforting meal.
