Marinade

Step 1Combine chicken, salt, lemon juice, garlic paste, ginger paste, red chili powder, Kashmiri red chili powder, coriander, cumin, garam masala, black pepper, yogurt, melted butter, and fried onions in a large bowl. Toss until chicken is evenly coated. Cover and let marinate at least 10 minutes (longer if time allows).


Sauce and Assembly

Step 2Heat oil in a wide, heavy-bottomed pan over medium heat (use onion-frying oil if available for deeper flavor). Add marinated chicken and sprinkle turmeric over the top. Cook, stirring occasionally, until chicken begins to brown lightly and spices turn fragrant, about 5 minutes.


Step 3Stir in ketchup and mix well. Pour in hot water and bring to a gentle simmer. Cover, reduce heat to low, and cook until chicken is tender and sauce has thickened slightly, about 25 minutes, stirring occasionally.


Step 4Uncover and fold in milk powder, kasuri methi, reserved fried onions, and coriander. Stir gently to combine. Cover again and cook over very low heat to let flavors meld, 5 minutes.


Step 5Top with extra coriander if desired. Serve hot with pulao, porota, or roti.
