Ingredients:

  • 4 tbsp cooking oil

  • 1 tsp mustard seeds

  • 8-10 curry leaves

  • 4 green chilies, sliced

  • 1 cup onion paste

  • 1½ tsp garlic paste

  • 1 tsp ginger paste

  • ¾ tsp turmeric powder

  • 1 tsp black pepper, ground

  • ¾ tsp roasted cumin powder

  • 1 cup coconut milk

  • 1 tsp + a pinch of salt, or to taste

  • 400 g shrimp, cleaned

  • Fresh coriander, chopped, for garnish






Instructions:

  1. Heat the Oil: In a pan, heat 4 tbsp of cooking oil over medium heat.

  2. Pop the Mustard Seeds: Add 1 tsp of mustard seeds and 8-10 curry leaves to the hot oil. Allow the mustard seeds to pop before proceeding.

  3. Sauté the Chilies: Add the sliced green chilies to the pan and stir well.

  4. Cook the Onion Paste: Add 1 cup of onion paste to the pan. Cook for about 4-5 minutes on medium-high heat. Add a splash of water if the mixture starts sticking to the pan.

  5. Add Garlic and Ginger: Mix in 1½ tsp of garlic paste and 1 tsp of ginger paste. Sauté for 2-3 minutes, then add another splash of water.

  6. Spice it Up: Add ¾ tsp of turmeric and 1 tsp of black pepper. Stir until the oil begins to separate from the mixture.

  7. Mix in Cumin and Coconut Milk: Add ¾ tsp of roasted cumin powder and 1 cup of coconut milk. Stir well to combine all the spices with the milk.

  8. Season: Season with 1 tsp of salt, plus a pinch more according to your taste.

  9. Cook the Shrimp: Add 400 g of cleaned shrimp to the pan. Mix well and cook covered for about 3 minutes on medium heat.

  10. Garnish and Serve: Garnish the curry with freshly chopped coriander. Serve hot alongside pulao or rice for a satisfying meal.
