Cheesy Nachos with Spiced Ground Meat and Homemade Sauce

For the Meat:
  • 454g ground meat (beef, chicken, or turkey)

  • 1 tsp chopped garlic cloves

  • ½ tsp salt

  • ⅛ tsp black pepper

  • 1 tsp red chili powder

  • ½ tsp coriander powder

  • ½ tsp roasted cumin powder

  • ¼ tsp oregano

For the Spiced Oil:
  • 1 tsp cooking oil

  • 2 small cinnamon sticks

  • 2 cloves

  • 1 bay leaf

  • ½ tsp cumin seeds

For the Cheese Sauce:
  • 1½ tbsp unsalted butter

  • 1½ tbsp all-purpose flour (maida)

  • 1½ cups warm milk

  • 1 cup cheddar cheese

  • 1 tbsp hot sauce

  • 2-3 tbsp Parmesan cheese

  • salt & pepper to taste

  • 4-6 cups tortilla chips

  • Chopped onion

  • Chopped tomato

  • Thinly sliced jalapeño chili

  • Fresh coriander

  • Sour cream or plain yogurt


  1. Prepare the Meat: In a bowl, mix together all the meat ingredients until well combined.

  2. Spice the Oil: Heat 1 tsp of cooking oil in a cast-iron or non-stick pan. Add cinnamon sticks, cloves, bay leaf, and cumin seeds. Sauté for 30-40 seconds until fragrant.

  3. Cook the Meat: Add the meat mixture to the pan and cook for 7-8 minutes, breaking it up and stirring occasionally. Cook until the meat is done and crisped, and the fat is rendered. Turn off the heat and add ½ tsp of lime juice.

  4. Make the Cheese Sauce: In a separate saucepan, melt the butter and add the flour. Cook for 2-3 minutes until the flour changes color. Add the warm milk, ¼ cup at a time, and keep stirring until the mixture thickens. Add the cheddar cheese and hot sauce and mix well. Finally, add the Parmesan cheese and cook for an additional 2-3 minutes. Add salt & pepper to taste. Keep the mixture warm.

  5. Assemble the Nachos: On a serving plate, spread the tortilla chips. Evenly pour the cheese sauce over the chips. Sprinkle with chopped onion, tomato, and thinly sliced jalapeños. Add the cooked meat on top, and garnish with fresh coriander and a dollop of sour cream or plain yogurt.

  6. Repeat & Enjoy: If one layer isn't enough, feel free to repeat the process for double the yumminess!
