¼ cup coriander
¼ cup green onions
1 tsp ginger, finely chopped
¼ tsp salt
¼ tsp black salt
½ tsp red chili
1 tsp roasted cumin
¾ cup tamarind water
1 small boiled potato, finely grated
1½ tbsp gur/jaggery
1-2 green chilies, finely chopped
Water to adjust consistency
For the Dough:
Mix 2 cups of atta, ½ tsp salt, and 1 tbsp cooking oil in a bowl.
Add approximately 1 cup of warm water.
Knead into a smooth dough (4-5 minutes by hand).
Cover with a damp cloth and rest for 10 minutes.
For the Chutney:
In a separate bowl, combine all chutney ingredients and mix well. Adjust water for consistency. Set aside.
For Assembling and Cooking the Porota:
Divide the rested dough into 4 equal portions. Roll each into a ball.
Roll out one ball into a thin disk.
Spread a bit of cooking oil and atta on the disk.
Sprinkle chopped garlic, coriander, and red chili flakes. Tap to stick.
Cut the disk into 4 portions, with one being larger.
Overlap the smaller cuts and cover with the larger piece. Seal edges.
Roll out thinly, sprinkle nigella seeds, and roll to stick.
Fry in a hot pan, flipping once or twice, then add cooking oil.
Cook over medium heat until done.
Enjoy your porota with the prepared instant onion chutney!
