Dudh Lau (Bottle Gourd in Milk)


Small Bottle Gourd/ Squash (Lau)

Milk 1 Litre

Evaporated Milk 1 cup

Ghee 2 tbsp

Sugar 1/4 cup

Cinnamon Sticks 2

Cardamom 4 pcs

Rosewater 1/2 tsp

Chopped pistachio for Garnish


  1. Scrape the skin off the Lau (gourd), use a mandoline to shred the Lau into very thin slices.

  2. cook the shredded gourd / lau for 3-4 minutes in boiling water .

  3. cool it down and wring out excess water .

  4. On a pan add ghee , cardamom, cinnamon and the gourd/ lau and stir them for 10 min in med low heat.

  5. Now add milk, evaporated milk and stir until it thickens . approx ( 40-50 min )

  6. When the milk has thickened, add sugar.

  7. Stir slowly, add rose water

  8. Serve the cold Dudh Lau with chopped pistachio.
