Ingredients:
Small Bottle Gourd/ Squash (Lau)
Milk 1 Litre
Evaporated Milk 1 cup
Ghee 2 tbsp
Sugar 1/4 cup
Cinnamon Sticks 2
Cardamom 4 pcs
Rosewater 1/2 tsp
Chopped pistachio for Garnish
Directions:
Scrape the skin off the Lau (gourd), use a mandoline to shred the Lau into very thin slices.
cook the shredded gourd / lau for 3-4 minutes in boiling water .
cool it down and wring out excess water .
On a pan add ghee , cardamom, cinnamon and the gourd/ lau and stir them for 10 min in med low heat.
Now add milk, evaporated milk and stir until it thickens . approx ( 40-50 min )
When the milk has thickened, add sugar.
Stir slowly, add rose water
Serve the cold Dudh Lau with chopped pistachio.
