Ingredients:
Baby Eggplants 8 pcs
Turmeric 1/4 tsp for Saute and 1/2 tsp for Gravy
Salt to taste
Chopped Onion 1.5 cup
Garlic Paste 1 tsp
Ginger Paste 1 tsp
Red Chili Powder 1 tsp
Diced Tomato 1 cup
Sugar 1/2 tsp
Water 1/2 cup
Coriander
Directions:
Cut the eggplants into quarters, leaving stems intact. Add turmeric salt and mix it thoroughly and deep fry them for 5-6 min on a pan over high heat. Set aside the fried eggplants.
For gravy:
Heat the remaining oil and add onion and saute them for 3-4 min then add salt, turmeric , chili powder and cook them for another 5-6 min. Then add tomato and cook the gravy for good 5-6 min (add a little bit of water to cook the spices) .
Finally, add eggplants in to the gravy & simmer for few minutes.
Garnish them with Coriander.
Your delicious dish is ready.
